A crostata is a rustic pie – it is Julia Cooks fantastic all-butter pie dough (good enough to eat on its own – the kids fight over the raw scraps of dough) rolled flat. Then deliciously ripe pears mixed with butter and sugar are layered atop sweetened almond paste. It is almost like an almond croissant and a pear pie teamed up to fill your mouth with flavor.
Imagine a delicate and buttery crust, gorgeously sweetened almond paste topped with the outrageous sweetness of ripe pears – is there anything not to love here? This is reasonably close to pure joy.
